Our Kacchi Biryani starts the night before. The mutton is marinated for a minimum of 12 hours in a blend of yoghurt, ginger, garlic, and imported Bangladeshi spices. The next morning, it is placed in a heavy-bottomed pot with aged Basmati rice, sealed with dough, and slow-cooked on a low flame for over four hours. The result is meat so tender it falls off the bone and rice that has absorbed every flavour of the marinade.
We cook our biryani fresh every day. We never reheat biryani from the previous day. This is our non-negotiable standard and the reason our guests keep coming back.
